I love pancakes. I have been making pancakes for as long as I remember, I just cannot get enough. However, with my recent desire to live a more healthy lifestyle, I am increasingly trying to find ways to continue enjoying my staples but in a healthy way. Enter Oatmeal Pancakes. I love this recipe a lot because it allows me to indulge without the bloating and first class guilt that comes with chowing down a stack of pancakes.

This recipe gives you the best of both worlds, indulgent yet (semi) healthy pancakes. Serve with some Maple Syrup, Agave Nectar or Honey.
- 1/2 Cup Oatmeal
- 1/4 Cup Self Raising Flour
- 1/4 Cup Wholemeal Flour Optional: You can skip this and use half a cup of self raising flour
- 1 tbsp Brown Sugar
- 1 tsp Baking Powder
- 1 tsp Baking Soda Same as Bicarbonate of Soda
- 1 pinch Salt
- 1/2 Cup Buttermilk I use Whole milk with 1 teaspoon of lemon juice, stirred and allowed to it for a minute or two
- 1 Medium Egg
- 1 tbsp Melted butter
Combine the dry ingredients in a bowl
Pour the wet ingredients into the blender followed by the dry ingredients mixed together
Blend until relatively smooth (about 1 minute) depending on the wattage on your blender
Pour blended mixture back into a bowl and whisk in the egg (don't whisk too much)
Grease a non-stick frying pan with melted butter or oil spray and allow to heat up. Pour pancake batter into hot pan, only pouring a little at a time. Fry until bubbles start to appear and flip to fry on the other side. Allow pancakes to brown on both sides, flipping a few times if you have to.
Serve and Enjoy!
